To be used sparingly, watercress is ideal in sandwiches, soups or pasta dishes, salads, grilled vegetables or with meat. It promotes eye health and is also beneficial for teeth. It contains vitamins A, C, K and isothiocyanates. It is possible to produce sprouts or microgreens. Watercress seeds are mucilaginous, so it is complex and difficult to obtain sprouts using the traditional method. We recommend always using EVA H but with the same method as for microgreens. To obtain microgreens, use 1/2 teaspoon, about 2 g, no soaking, germination takes 2-3 days, blackout lasts 3-4 days and the harvest will be ready after about 8-12 days. It can be grown with water using EVA H or with coconut fibre using EVA S. There are about 400 seeds per gram.
